Apple cake

Ingredients

  • 1 cup flour
  • 2 eggs
  • 2/3 cup sugar
  • 1/2 cup (1 stick) unsalted butter, melted
  • 1 tablespoon white rum
  • 1/2 package (about 8g) Lievito Bertolini
  • 5 red delicious apples, peeled and thinly sliced
  • 1 lemon, zested
  • Pinch of salt

Directions

    Preheat the oven to 350°F. Grease a 9-inch round cake pan with butter and dust with flour.

    In a large bowl, beat the eggs with a mixer until frothy, then add the sugar and beat until pale and well combined.

    Using a spatula, fold in the melted butter, salt, lemon zest, and white rum.

    In a separate bowl, whisk together the flour and Lievito Bertolini.

    Peel, core, and thinly slice the apples, then fold them into the egg mixture.

    Add the flour mixture to the wet ingredients one spoonful at a time, folding gently until just combined.

    Pour the batter into the prepared pan and bake for 1 hour, until the top is deep golden brown and a skewer inserted in the center comes out clean.
