Sfincione pizza

Ingredients

  • 1 ball pizza dough (about 1 lb)
  • Flour, for dusting
  • Olive oil, for the pan and drizzling
  • 2 oz Parmesan, cut into small cubes
  • 1 can (14.5 oz) whole peeled tomatoes
  • 1/2 onion, thinly sliced
  • 1/2 cup breadcrumbs
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt

Directions

    Preheat the oven to 400°F.

    Lightly flour a work surface, then press and stretch the pizza dough into a lightly oiled 9×12-inch baking pan.

    Push the Parmesan cubes evenly into the surface of the dough, spacing them so each slice will get a few pockets of melted cheese.

    Break up the tomatoes by hand and spread them evenly over the dough, discarding most of the liquid.

    Lay the sliced onions evenly over the tomatoes.

    In a small bowl, stir together the breadcrumbs, salt, and oregano, then sprinkle the mixture evenly over the top.

    Drizzle generously with olive oil and bake for 20 to 30 minutes, until the bottom is golden brown and the top is set.
